Seasons focaccia is made with a blend of WILDFARMED flour and slathered in the highest quality greek Honest Toil extra virgin olive oil.
The process of starts the day before it's baked, where a pre-ferment called "poolish" is made; essentially a blend of flour, water and a very small amount of yeast are mixed together and left to ferment slowly overnight. This improves flavour, extensibility and general dough conditioning. The rest of the ingredients are added next day and over the course of 7 hours, a series of folds, mixing and rests, the most delicious focaccia comes out of the oven.
